Diced red pepper
Green chilies (can)
Small amount of Rice
Thinly sliced chicken breast
Diced cilantro, diced avocado, and wedge of lime to add when serving
Cook chicken ahead of time and let cool. When cool, slice thin and set aside. Sautè onions and red peppers. Add Green Chilies, Chicken broth and very small amount of rice. Cook till rice is done. Add sliced Chicken. Continue cooking until the chicken has had time to reach the temperature of the soup.
Just before serving, add diced cilantro, diced avocado, and wedge of lime.
